The Weber Smokey Mountain Cooker Smoker
Weber make 2 versions of the smokey mountain cooker smoker (sometimes called the Weber Bullet) & although they are not normally thought of as portable, the smaller version (18.5") will fit into the trunk or boot of the average car. The Weber smokey mountain cooker smoker gives that good old slow cooked smokey barbecue flavor to your food. An ideal smoker for the back yard or that special event away.
The unit comes in three sections. At the bottom there is a bowl for placing your charcoal, briquettes or wood for smoking. Next a cylindrical mid section which contains a water pan which protects the meat from direct exposure to the coals & helps regulate temperature & moisture content; two triple chrome plated cooking grates & a convenient fuel access door so water or smoke wood can be added at any time. On top we have the classic Weber hemi-spherical dome shaped lid.
It comes with a recipe book to get your smoking adventure started, an owners manual & easily followed assembly instructions. The only tools you will need is a screwdriver & an adjustable wrench or spanner. Simply attach the three legs to the bottom bowl & the four support brackets to the inside of the mid section & you're ready to go.
The two cooking grates provide heaps of cooking space. You can cook 6 whole chickens or four Boston butts or eight slabs of baby back ribs or two large briskets or a good mixture of the above. That will feed a fair few people some good & tender food.
Remember, this is no ordinary grill. It's specially designed to barbecue meats slowly over low heat in a smokey environment. To do this requires fairly exact control of cooking temperature. This is achieved through the use of the water pan & the near air tight design of the venting system. There are three adjustable vents in the charcoal bowl & one adjustable vent in the dome shaped lid. These allow excellent control of temperature & easy maintanace of near perfect temperature of 225 F - 275 F (107 C - 135 C). The Weber smokey mountain cooker can cook for many hours without making any adjustments at all, unlike some cookers which have to be watched & adjusted often.
Don't forget, regular cleaning is essential for long term care & success. When you have finished cooking & have disposed of the ashes & water pan waste, you should:
- While the cooker is still warm, use a paper towel to Clean the edge of the lid & middle cooking section to wipe off any grease,
- Use hot, soapy water and a scrub pad to wash the grates in your kitchen sink or laundry trough. A short 15 minute soak sometimes helps. (To stop the cooking grates from rusting over time, make sure they are dry & store them out of the weather. If they are left in the smoker outside they will probably rust over the years.)
- Soak the water pan in hot, soapy water and use a non-abrasive cleanser like Soft Scrub. Give it a good Scrub, rinse, and dry thoroughly. (If you cover the water pan with heavy duty aluminum foil before you use it, it's much easier to clean.)
